Chicken Moambe
Ingredients
- 1 pkg Meal Starter Mix
- 3 C chicken
- 2 tbsp olive oil
- 2 onions
- 1 can tomato sauce, low sodium
- 3/4 C peanut butter
- 3 green onions
Instructions
- In a saucepan, heat oil. Add the onions and sauté until golden. Add the tomato sauce, spices, and water and mix well. Add chicken to the pot and mix. Turn heat to high, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Thicken mixture with peanut butter. Cook uncovered for an additional 10 minutes.
- Serve with Meal Starter Mix and a salad. Garnish with green onions (optional).
