Congo Chicken Moambe (Stew)
Ingredients
- 1 IFH Family Rice Casserole
- 3-4 lbs. chicken (your choice – thighs, breasts, etc.), cut into
- bite-size pieces or shredded after it has been cooked
- 2 cups of water OR chicken broth
- 1/4 teaspoon cayenne pepper
- 1 onion, minced
- 1 dash nutmeg
- 1 (8 oz.) can tomato sauce
- 1 tablespoon butter
- 1 cup low sodium creamy peanut butter
- Salt and pepper to taste
Instructions
- Place chicken in an oven-safe dish and add chicken broth, bake in oven preheated to 350 degrees F. for 30 min.
- In another pan, sauté butter, onion, tomato sauce, nutmeg, and cayenne pepper for 3 minutes over medium heat.
- Add chicken and 1.5 cups of the broth that was cooked with the chicken, cover and allow to simmer for 15 minutes.
- Add peanut butter, stir to thicken, and place in a 350 degree F. oven for 30 minutes, uncovered.
- Serve chicken on top of a cooked IFH Family Rice Casserole (see package for cooking instructions).
